The Hario V60 is a conical pour-over dripper. Hot water is poured slowly over ground coffee in a paper filter. The result is a clean, transparent cup — unlike espresso, individual flavour notes come through distinctly.
At 23:05, our V60 is brewed to order — never batch-brewed and kept warm.
Our Brew Process
- Rinse the filter — removes papery taste and preheats the vessel
- Grind to order — medium-fine on a calibrated burr grinder, never pre-ground
- Bloom pour — twice the water weight of the coffee, 30-second bloom releases CO₂
- Slow spiral pours — two to three pours over 2–3 minutes, 92–94°C water throughout
- Serve immediately — in a pre-warmed cup, clear, bright, and aromatic
Origins We Rotate Through
- Ethiopia — Bright citrus, bergamot, jasmine florals. One of the most aromatic origins in the world.
- Colombia — Red apple, caramel, and chocolate from Huila or Nariño. Approachable complexity.
- Kenya — Blackcurrant, tomato juice acidity, and a long savoury finish. SL28 and SL34 varietals.
- Panama / Geisha — Delicate, tea-like, with stone fruit and honey. Available seasonally.
